Pumpkin quiche 🎃 and cabbage in a whole wheat tortilla

Preheat the oven to 200°. Roast the pumpkin 🎃 in the microwave peeled or peel it afterwards.

Cut the cabbage into small pieces.

Mash the pumpkin, add the cabbage and cream cheese and stir until everything is well integrated. Add the previously beaten eggs, salt and pepper and stir again.

Put the omelet in an ovenproof bowl and fill it with the previous mixture. Put it in the oven until you see it starts to set. Take it out and put Parmesan cheese on top (optional) and gratinate until golden brown.
