Cut two cloves of garlic and throw them in a frying pan or pot until golden brown. When they are golden brown, add half an onion and a diced carrot and let it fry for a while.

When all these vegetables are poached add mushrooms and in this step I have added a little soy sauce.

I chopped a cauliflower very finely (imitating rice) and added it. If you want it to be finer you can blend it in a blender. To cook it a little, I added about half a glass of vegetable broth.

Add cooking cream and spices to taste. Then cheese just before removing from the heat to melt a little (I used parmiggiano and a slice of cured cheese).
