Quinoa stir-fry with vegetables, chicken and cheese

First we cook the quinoa according to the manufacturer's instructions. I usually use 3 parts water to 1 part quinoa. When the water comes to a boil, lower the heat and add the previously washed quinoa. Remove when ready and set aside.

Cut the vegetables into small pieces and add spices to taste. To cook them, you can boil them or, as in my case, steam them in the microwave. When they are ready, set aside.

You can also make the chicken breast as you like it. I cut it into cubes and grilled it with a little bit of olive oil.

Once we have everything ready, we mix the quinoa, the vegetables and the chicken in a casserole and we put it to heat. Add a couple of spoonfuls of crushed tomato and cheese cubes. Leave it until it melts.
