INGREDIENTS (for 2 persons): - 4 medium potatoes - 4 artichokes - 2 eggs - spring onion - salt and pepper - pepper - 3 spoonfuls of EVOO

Peel and cut the potatoes into small sticks.

Peel and cut the artichokes into strips.

Soak both parts in cold water for 15 minutes.

Preheat the oven to 200°.

Drain and dry well. Add them in a bowl and pour the EVOO and season with salt and pepper. Mix with your hands.

Bake until the potatoes are golden brown (about 30 minutes).

Serve with a grilled egg and chives.
