Homemade almond nougat

Chop the almonds into a flour. If they are not already toasted almonds, toast them in a frying pan for about 10 minutes. They must be toasted without burning! No oil is needed.

On the other hand, process the dates with the cashews, cinnamon and the zest of 1/4 lemon. It should be a paste. I did not add any other sweetener, but this would be the time to do it if you want.

Mix the paste obtained with the almond flour in a bowl with a spatula or directly with the hands until the two preparations are integrated.

Return the mixture to the food processor, add the coconut oil and blend until smooth.

Place the dough well compacted in molds for nougat or others, I used milk cartons split in half. Wrap it in plastic wrap and put it in the refrigerator with weight on top so that it is well compacted. Let it rest overnight.
