✳ INGREDIENTS ✳. ▪︎ 30gr quinoa. ▪︎ 30gr texturized soybeans. ▪︎ 1/2 spring onion. ▪︎ 4 tbsp chickpea flour. ▪︎ 5 tbsp water + 5 tbsp soy beverage. ▪︎ 1 teaspoon garlic powder. ▪︎ 1 teaspoon onion powder. ▪︎ 1 teaspoon turmeric. ▪︎ Pinch of salt and pepper.

✳ HOW IS IT DONE? ✳ Cook the quinoa. Hydrate the texturized soybeans. Cut the spring onion and sauté. We make the "egg", mixing the chickpea flour, spices, water and soy beverage, stir well. Drain the textured soybeans and the cooked quinoa, put them together with the spring onion in the "egg" mixture and mix everything very well. Add a little oil in the frying pan and add the dough, let it cook on one side and turn it over and let it cook on the other side. And now you have a delicious omelette!
