Beer-braised chicken with almonds 🍗

I have used chicken hams but you can use a whole split chicken, hind quarters, etc. Mark the hams in a hot pan with a drizzle of olive oil and season with salt and pepper. Remove and set aside.

In the same casserole we poach the chopped vegetables over medium heat (garlic, onion, red bell pepper, carrot). Season with salt and pepper. When it is sautéed add the ham and add the bay leaf and a beer (it seems that in the real food world there is no such thing as beer. It is for cooking, eh! 😝). Let it cook for 15 min.

Add the teaspoon of flour to thicken the sauce and also the almonds. You can leave the vegetables as they are, but I decided to remove the hams and blend the vegetables in a blender to obtain a thinner sauce.

I added a little bit of oil and sautéed some mushrooms and a carrot cut in slices, but this is optional (I also added a handful of almonds). Pour the sauce into the casserole and add the little hams and let them cook for 5 minutes or so over low heat. And there you have it!
