Homemade Almond Milk

The quantities I have indicated are approximate. Generally one glass of almonds in 3-4 glasses of water should be used according to taste. Leave the almonds to soak overnight (if it is hot better in the fridge); in the morning, drain the almonds and put them in a blender with half of the water and a date. Blend at maximum power for a couple of minutes.

Add the rest of the water and mix for a couple of minutes more.

Filter the liquid with a bag for vegetable beverages or with a cotton cloth.

Squeeze well to collect as much liquid as possible.

The almond pulp can be used in other preparations; if you plan to use it soon (1-2 days) it can be stored in the refrigerator, otherwise it is convenient to freeze it and take it out a little before using it.

Keep the milk in the refrigerator for up to 4-5 days or freeze it in the ice cube tray to add a fresh touch to coffee or prepare milkshakes.
