Soak the chia seeds overnight, or until well hydrated, in the water.

Whisk the hydrated seeds with the water and coconut oil.

In another bowl, mix the rest of the dry ingredients, except the cocoa nibs.

Integrate the mixture of dry ingredients into the mixture of wet ingredients. Stir with a spatula until the mixture is homogeneous.

Pour the mixture into muffin tins and sprinkle the cocoa nibs on top.

Preheat oven 200° and bake muffins for 20 minutes.
