Salmon with spicy mango sauce

Cut the onion and poach a little with the chili peppers.

Cut the mango into squares and add to the onion along with the ginger. Cook over medium heat for 5 minutes.

Pour the mango with the onion into a blender cup with a little water and curry and blend until the desired texture is obtained. Return the mango puree to the pan and cook over low heat for 10 minutes.

In a baking tray put a layer of mango sauce, the salmon on top and bathe again with a little more sauce. Bake in the oven at 180 °C for 15 minutes.

While the salmon is cooking, prepare a bed of salad on a plate with the spinach, avocado and tomatoes. Place the salmon on top and drizzle with a little more sauce.

Note: I usually make the sauce with a whole mango and a quarter of an onion, the leftover I keep in the fridge because it is also very good with salads, chicken, shrimp .... And it is also very good cold
