Chop the chicken breast in a food processor (go a little at a time if your food processor is not very strong). Transfer to a bowl.

Chop the onion, garlic and parsley. Add to the chicken and mix. Season to taste with salt and pepper, add the oregano and mix.

Cover with cling film and let stand in the refrigerator for at least 1 hour.

Moisten your hands with water, form the patties and cook on the griddle with a drizzle of oil until done. (*) NOTE ON FREEZING: If the chicken is fresh you can freeze them directly like this, raw. But if the chicken is frozen, you must cook them first before refreezing them.
