Put the vegetable broth in a saucepan. When it boils, add the vegetables cut in julienne strips and cook for 15 minutes over low heat.

Boil the eggs separately for 7 minutes (or to taste). On the other hand, boil the rice noodles for 2 minutes less than what the package specifications recommend.

Once the noodles are cooked, add them to the vegetable broth and leave for 2 more minutes. Turn off the heat and add the soy sauce (you can also add miso sauce and any other sauce you like).

Serve in a bowl, add the hard-boiled egg and chop some chives.
