We put the water to boil for the pasta. While it is heating, cut the vegetables into small cubes.

We sauté the vegetables in this order: carrot, onion and zucchini.

Once the water starts to boil, add the pasta and salt to taste. The cooking process takes about 10 minutes.

Once the vegetables are fried, with salt and spices to taste, add the fried tomato.

When the pasta is ready, it is added to the sofrito that we have prepared.

Serve in a serving dish and add gratin cheese and oregano. Optionally we can give it a final touch in the oven to melt the cheese.
