MEAT: 700G Veal brisket

In a pot we put the meat with water to cover. Bring to a boil over high heat. When the water breaks we lower to medium heat for about two hours until the meat is tender. If it foams, remove it.

In the meantime we make a sofrito. In a frying pan with oil we brown the garlic cut into slices, add the onion, chopped peppers and poach it well. Then add the crushed tomato and let it reduce over medium heat.

We can peel the potato, the carrot and the zucchini (I leave the stem) and cut into pieces.

After two hours we will see that the water has reduced by half. We take out the meat and with the help of a fork we fray the meat, in the sense of the strands. If you see that the strands are too long you can cut them in half with scissors to make it more comfortable to eat.

We remove two cups of the remaining broth (we will use it to make the arepas) and to the rest of the broth we will add the sofrito (you can grind it if you want), the meat already shredded, the vegetables and potato. We add the. Cumin, coriander (it can be dry), pepper and salt to the taste. And let everything cook together until the vegetables are tender and the broth has reduced.

That day we ate it with arepas, but I also made a delicious lasagna, and my boyfriend used to make burritos with 100% whole wheat fajitas from Mercadona and yogurt sauce 👌👌 for dinner. You can freeze it perfectly. And if you do bachcooking it holds a week without a problem! Although it is always better to eat it before.
