Purple sweet potato gnocchi.

I used a purple sweet potato. With a large sweet potato I had enough for about 40 gnocchi. First we cook the sweet potato, I did it in the lekue in the microwave with a splash of water and a little oil. In my case I already had it from another day and I only had to take it out of the fridge. Here in the photo you can see it chopped, there were about 8 pieces of the same size that I had already started to grind. Do not peel them! It's not necessary and you get more fiber this way.

We mash it well and transfer it to a bowl, add salt, garlic powder, onion powder, dried basil in my case, and add flour. The photo shows the sweet potato just mashed.

I used mainly durum wheat semolina, which is what I had, and a little whole wheat flour. Keep adding until it doesn't stick to your hands. Do not overdo the flour, it is a little by eye.

Use whatever flour you have on hand. The reason you see shavings on the surface of the photo is because of the whole wheat flour, it is the bran. You can taste the dough to correct it. Just form the gnocchi, make the striations with a fork, and once we have them we put them to boil water and we throw them. When they begin to float they will be ready.

To accompany the gnocchi I made in a pan chopped garlic, chopped onion with pumpkin, garlic, chopped apple, chopped tomato, tartufata sauce and a little blue cheese, and on the plate raw spinach, pine nuts and grated Parmesan on top. In my case I put about 10/11 gnocchi per plate. It was very easy, quick and very tasty. ☺️
