First of all you will need to have homemade fried tomato sauce. Please don't buy it from a jar 🙈. It's as easy as poaching onion, garlic and tomato in extra virgin olive oil. Grind and that's it. Now that you have your tomato sauce, let's start with the recipe 😌.

First make a small cut to the potatoes like this.

This ensures that the potato has a flat base and does not move.

Now we are going to make cuts along the potato. The thinner the better. Be careful not to go all the way through with the knife or you will cut the potato in two 🤦🏼.

Place the potatoes in a bowl, paint them with a little extra virgin olive oil and season with salt and pepper to taste. Bake them for 50 minutes at 180° with heat up and down.

Take them out of the oven and top with your super homemade fried tomato sauce.

Don't forget to cover the gaps between the potatoes with mozzarella.

Return to the oven until the mozzarella melts.

Finish with oregano on top and a little grated Grana Padano.
