Wash the leeks well, chop them and put them in a casserole.

Peel the potatoes, wash them, mash them and add them to the casserole.

Add salt to taste, a dash of EVOO and 1.3 liters of water. The water must be two fingers above the leeks.

Cook for 30-35 minutes over medium heat with the lid on, making sure it does not dry out. If necessary, add more water. The last 5 minutes we remove the lid so that the broth thickens a little.
