Salmon and avocado tartar

THIS DISH IS FOR 3 PEOPLE! (Or at least in my house I have gone just with 3 servings). Start by dicing the smoked salmon into small cubes and set aside. Chop the avocado finely and set aside in another bowl.

In the mincer we grind 9 branches of chives (3 per person) the green olives (I put 9 in total, 3 per head) before putting them in the mincer we cut them into small pieces, we also add half a spoonful of lemon zest, once the mixture is minced we add the mixture to the two bowls. In another bowl add a spoonful of EVOO, the juice of a lemon, a pinch of salt and pepper and a small splash of soy sauce. Add to the two bowls and stir well.

Finally, with the help of a mold, plate the dish. Add the avocado as a base and place the salmon on top. To garnish, I put a sprig of chives cut in two. This dish goes well with bread, homemade potato chips (you have the recipe in my profile) .... ENJOY!
