Crunchy octopus and potato taco 🐙🐙

First wash the potatoes and put them to cook for about 7 minutes (with skin on). During this process we preheat the oven to 180 degrees.

Once the potatoes are cooked, take them out and cut them into cubes. Spread them on a baking tray with parchment paper. Add oil and salt. We leave them in the oven for 20 minutes, until they are golden brown.

On the other hand, pour a little oil on the gluten-free pancakes and place them in a flan pan (in my case). We introduce them in another oven tray for 5-10 minutes, until they are golden brown and the edges are crispy (it can be done at the same time as the potatoes or in different processes). These fajitas will be our containers for the tacos.

Once the potatoes and Fajitas are ready, cut the octopus legs into slices and fry in a pan with a little EVOO.

Now all we have to do is fill the octopus and potato cubes and sprinkle paprika on top.
