Sweet couscous with curry

First we hydrate the tomatoes in water for 20 minutes and then in olive oil.

We make the couscous: we boil the water with a dash of olive oil and a pinch of salt, when it starts to boil we put it aside and add the couscous. Cover and let it stand for 5 minutes, then stir to loosen the couscous.

We grill the chicken with curry (I also used ras al hanout, a mixture of Moroccan spices), cut it into pieces and mix it with the tomato in oil.

Brown the onion and add a teaspoon of date paste until it is integrated.

Finally, mix everything in the pan and add a little more date paste to taste and cinnamon.
