Octopus with potato parmentier and cheese thermomix

First of all, I recommend having the milk and butter weighed beforehand. It is 150 gr of milk. Not 150 ml. I use 2 small octopus legs per person or 1 large one. We put the water in the glass and the potatoes peeled and cut in cubes in the basket, we wash them and we place the basket in the glass. We program 25 min/ varoma/ vel 1

Remove the basket, discard the water and put the butterfly on the blades. Add the potatoes, salt, pepper, butter and cheese. Program 1 min/ temp100/ speed 1.

Then reprogram 3 min/temp 100/ speed 1 and add the milk through the nozzle.

Meanwhile, put the octopus legs in a frying pan with a few drops of EVOO to heat and brown them.

-Remove the butterfly from the blades and program 10 seconds/ speed 5/ no temp. Set aside in the glass until plating.

In a small glass or coffee cup we put a teaspoon of sweet or spicy paprika de la vera, depending on how we like it, and a little EVOO and we make an emulsion.

And now all that is left is to plate it. We put the potato and cheese base, on top of the octopus legs and with a spoon we spread a little of the oil emulsion with paprika. And enjoy. I hope you like it. Let me know how it turns out. 😋
