Hydrate the two sheets of neutral gelatin with water.

Heat the 60 ml of milk and mix it with the neutral gelatin sheets.

Put the egg whites in the microwave until they set (about 2 minutes).

Beat all the ingredients (eggplant, cocoa, egg whites, milk with gelatin and optional a teaspoon of stevia) if it is too thick add 20 ml of water and beat again.

We put the mixture in molds (I have enough for two flans of that size) We put 2-3 hours in the fridge and enjoy! It's rich Rico
