Cut the cauliflower into small florets and boil it in a pot with salt until tender. About 6' approx.

While the cauliflower is boiling, cut the two onions into small cubes and fry in EVOO until golden brown.

While the onion is browning, beat the 5 eggs in a bowl and add a pinch of salt.

Strain the cauliflower. Cool with water and sauté with the onion until golden brown.

Add the cauliflower and onion to the beaten egg and let the flavors mix for a few minutes. Correct salt if necessary.

Now we have everything ready, it's time to make our omelet!

Add a tablespoon of EVOO to a frying pan and wait until the oil is very hot, then add the egg mixed with the cauliflower and onion and cook over medium-low heat until it begins to set.

Using a plate to turn it upside down and let it cook until curdled.
