The first step is to cut the vegetables into small pieces, of a uniform size so that they are all done at the same time, and place them on baking paper. I have chosen carrots, asparagus and onion, but you can use other vegetables such as pumpkin.

The hake I had at home was frozen, so I took it out beforehand so that it was completely thawed before preparing it. We put the loins on the bed of vegetables and season with a little EVOO and spices. In my case I chose pepper and a little oregano, as the taste of the hake is delicate I would not use strong flavored spices.
