Monkfish with green sauce

Fry the onion and garlic with a little EVOO, add a tablespoon of oatmeal and mix well, chop some parsley to taste and add it.

Add the fish stock and let it boil for 10 minutes, seasoning the monkfish tail with salt and pepper.

Add the monkfish to the casserole (optionally we can add peas, clams, shrimps, etc.), cover and let it boil until the fish is cooked for 5 to 10 minutes.

To accompany it I made potatoes with air fryer. We can serve with rice or quinoa.
