The first step is to chop the onion and put it over medium-low heat to caramelize it (no need to add sugar with patience it caramelizes). Meanwhile we chop the 4 small potatoes into small squares and put them in the microwave (prick when they are done because each microwave and each cut size is different).

Do not forget to stir the onion! Do not let it burn. Once the potatoes are done, we mark them in the frying pan with EVOO to make them tastier. In a bowl we beat the eggs and once the potatoes are marked with the egg! Add salt, the cheese medallions and when the onion is inside too.

Let it rest a little bit and then put it in the frying pan with some EVOO on both sides and.... and we have it!
