Pork Tenderloin with Provencal Herbs.

A few hours before or the night before, leave the sirloin chopped and mixed with the Provencal herbs.

Clean and chop the vegetables, garlic and onion.

Sauté onion/garlic in EVOO with a little salt ( 1min. - 1'5 approx.)

Add the rest of the vegetables and after a few minutes add the sirloin (2-3 minutes).

Add the water and the De la Vera paprika. And when the water starts to boil, add the chopped potatoes. (in my case I wash it well, I don't peel it, I chop it and put it in the casserole).

The cooking time over medium heat after you have added all the ingredients, varies according to each one's eye. I had it 12 - 13 min.
