Mix the flour with the egg and a splash of EVOO with a spoon until everything is integrated. Then start to knead with your hands and add the water little by little until you have a good dough that is not sticky and can be handled. Make a ball and let it rest covered with a cloth for 30 minutes.

Next, cut the cheese into rectangular cubes (more or less like in the photo). When the 30 minutes have passed, stretch the dough with the help of a rolling pin so that it is not too thick. Preheat the oven to 250 with heat up and down.

Now it's time to shape the tequeños: cut the dough into strips about 20cm long and 2cm wide and roll the cheese cubes diagonally and tightly at the ends, so that there are no holes and the cheese does not come out.
