Add to the pot or pan a dash of olive oil and heat. Chop all the vegetables and poach them in the oil with a little salt.

When the vegetables are a little poached, clean the meat, remove the bones and fat streaks. Chop into pieces and add them to the pot with another pinch of salt. Let it fry for 5-6 minutes and cover with 4 glasses of water.

Let the stew cook for about 30 minutes until the meat is tender, adding more water and salt depending on how we see it.
