Cut the sweet potato in half and bake in the oven for about 20 minutes at 180 degrees.

Chop the mushrooms and onion into small cubes.

Sauté the mushrooms and onion in a frying pan with a tablespoon of EVOO and a little salt, until cooked.

Add the cashew nuts to the sautéed mixture and stir.
