For the dough 500gr wheat flour 1 cube of fresh yeast (25gr) 250cc warm water 20cc olive oil 10gr salt

Make a crown with the flour, crumble the yeast in the center and add the water. Incorporate the ingredients, add the oil and finally the salt.

Knead for 10 minutes. The dough should be smooth. Let it rest in a bowl and cover with plastic wrap for 10 minutes. Divide the dough into 2 buns and let rise for 1 hour until it doubles in size. Cut the onion and marinate it in oil, salt, pepper and oregano.

Once risen stretch in the mold with a little flour or low oil so it does not stick. Put some of the marinated onion and let it rise for 20 minutes more. Turn on the oven to 230 degrees. Bake in the oven for 10 minutes.

Then add the mozzarella and the rest of the onion and cook for 8 more minutes.
