Zucchini, pesto and dried tomatoes

First we make the zucchini cream for the base. Poach the onion. Once poached add 1 zucchini cut into pieces and add a little water. Let it boil for 20-25 minutes, mash, correct the salt and set aside.

We make the pesto: 1 glass of olive oil, pine nuts, parmesan, basil leaves and salt. Grind and set aside.

We take a zucchini and make spaghetti with the machine. If we do not have the machine we can make small strips with a mandolin or a peeler.

Once we have the spaghetti done, we turn on a frying pan, at medium high heat and we throw them so that they get temperature and brown a little. Once they are browned, it is time to add salt and a dash of oil.

We assemble the dish: in a deep dish we put the zucchini cream as a base, we add the spaghetti and on top we add some pesto. As a topping we will add some chopped dried tomatoes and some fine parmesan leaves and enjoy!!!!
