Start by roasting the pumpkin until it is soft. Mash with a fork, add salt and pepper and set aside.

Cut the sweet onion into small pieces and fry it in a pan with oil. When the onion is golden brown, add a splash of white wine, let it evaporate, and add the roasted pumpkin. Sauté for a couple of minutes and add the rice. Add water little by little. The rice will take about 15/18min to cook. It is important that you add water all the time without stopping stirring and with the fire low. When the rice is cooked, turn off the heat and add grated cheese. Adjust the salt and pepper, serve and enjoy!
