- Poach the onion in a pan with EVOO.

When poached, add the spinach leaves and turn off the heat.

- Beat the eggs and season with salt and pepper.

- Add the onion and spinach to the bowl and mix well.

- In an air fryer/baking pan, place two pancakes as a base.

- Add half of the mixture as well as the three slices of cheese.

- Cover with the remaining half of the mixture and add goat cheese to taste.
