First clean the leek and cut it into julienne strips. Chop the onion and garlic and fry them together in a frying pan with a little EVOO and ginger.

In the meantime, we put a potato to cook in the microwave for 5' (depending on the size of the potato) and once cooked we let it cool, peel and cut it into pieces.

Chop the red cabbage and cook it in a pan with salt (just enough water to cover the cabbage).

When the red cabbage is soft, add the potato, the sofrito we cooked at the beginning and the apple cut in the casserole and leave it a couple of minutes more so that everything is impregnated with flavor.

Add the milk and cheese to give it more texture, and once we take it off the heat, beat it with the mixer.
