Mix the sugar with the salt. Put a bed of this mixture in a bowl, add the salmon skin side down and cover with the rest of the mixture. If we want we can flavor before covering with the mixture with fresh dill and add lemon juice to the mixture of salt and sugar.

Remove from the refrigerator, remove the layer of salt and sugar and remove the remains under cold water.
