Cut the chicken breast into strips. Season each piece with salt and pepper.

Prepare two bowls: one with the cornflakes (I used unsweetened cornflakes and crushed them with a glass) and the second with an egg and a pinch of parsley. Stir the latter.

Dip each piece of chicken in the egg and then in the flakes to bread them.

Add a little EVOO on each piece. You can use the oven or airfryer. Oven: (preheated at the beginning of the recipe) about 200º and 20 minutes. Airfryer: without preheating, 200º and only 8 minutes. In both cases turn them over halfway through the cooking time.
