Salmon with cauliflower, spinach and mushrooms

Wash and grate the cauliflower.

Chop the spinach (if large). Clean and dice the mushrooms and julienne the onion.

In a frying pan, pour a dash of olive oil and, when it is hot, add the onion and mushrooms. Cook them over medium-high heat for about 2 minutes.

Add the cauliflower crumbs and soy sauce. Sauté with the other vegetables for about 5 minutes.

Add the chopped spinach and cook 3 minutes more. Taste and add soy sauce if necessary. Set aside.

In the same frying pan, pour a dash of olive oil and grill the salmon. Season with salt and pepper.

Serve on the plate, first the vegetables and then the salmon. Garnish with lemon and a teaspoon of natural Greek yogurt.
