Make the noddles with a spiralizer (reserve some zucchini for decoration).

Place the zucchini noddles at the base of the plate, carrot noddles on top and beet noddles at the end.

Make a sauce with 1/2 avocado, 1/2 peach and the juice of 1/2 lime.

Top with the sauce and garnish with the rest of the avocado, zucchini, peach, spices and I also added homemade vegan cheeses.
