Cut the onion into thin julienne strips (I always use red onion but this time I didn't have any and used shallot) and put it in a bowl.

Squeeze the limes. There should be a generous amount of juice. If you are going to add the coconut milk, now is the time. Stir in the onion and set aside while you prepare the rest.

Peel the avocado and cut it into cubes. Do the same with the mango. Put them in the bowl with the onion.

Add a little salt and pepper on top, and a good amount of chopped cilantro. Mix everything together.

You can serve it at the moment, although it is better if you let it rest for a while in the refrigerator, so that the flavors settle.
