Cut the onion into julienne strips and poach it in a pan with a splash of oil, I put a pinch of baking soda to accelerate the caramelization process, but very little because otherwise it releases too much liquid!

Set the onion aside in a colander to release excess juice (I left it overnight in the refrigerator).

For the dough, beat the egg with the two very green bananas and the ghee (oil or butter is also suitable) and salt or spices to taste.

Spread the dough on a baking sheet covered with baking paper, in as thin a layer as possible, and place the dough in the oven at 180°C, heat up and down with fan, for about 25 minutes.

Remove the dough, place it with the baking paper without a tray on a rack, pierce the dough a little with a fork and also the baking paper to prevent it from getting too wet.

Sauté the bacon a little in a frying pan so that it releases a little of the fat and cooks without drying it too much.

Add all the ingredients on top of the dough and put back in the oven for about 5 more minutes on top and bottom with fan and then with the broiler on top until the onion and bacon are browned.
