Eggplant and zucchini moussaka

On the one hand, I slice the eggplant and the zucchini and I grill them (it could also be done in the microwave). When the tomato is chopped I grind it so that it looks like a sauce and in another pan I add the spoonful of EVOO, 1 chopped clove of garlic and the tomato (I usually add a pinch of sugar to remove a little acidity), salt and pepper to taste and cook it.

In a baking dish we put tomato sauce on the base, then I put a base of eggplant and cheese on top. Another base of tomato sauce, zucchini, cheese and tomato and so on until the vegetables are finished.

Beat the eggs, salt to taste and add the remaining cheese, stir and pour into the pan. Bake in the oven until the egg sets.
