Preheat the oven to 180°C. Place the sea bass fillets on the oven tray, season with salt and pepper and brush with half of the EVOO.

Bake in the oven for 10 minutes.

In a bowl, mix the mustard, cream, remaining EVOO, salt, pepper, parsley and a dash of lemon juice.

After 10 minutes, pour the sauce over the sea bass and cook for another 10 minutes.
