Chop the onion 🧅 and the garlic 🧄. Put in a frying pan two tablespoons of olive oil and pour the 🧅🧄 you let it cook until transparent. When it is, add the cashew nuts.

Wash and cut the mushrooms 🍄 add them to the pan after the cashew nuts, stir and let them cook for a few minutes. After that time, add the beans, mix everything well and add the water or vegetable broth.

Let it boil and then we can add the risotto, turmeric and salt to taste (I left it cooking for 20 minutes). Serve and sprinkle some chopped chives on top.
