First we make the softito; a chopped onion and a grain of garlic with EVOO.

Once browned add the vegetables according to the time they take to cook (carrots, peppers, eggplant, zucchini, mushrooms and broccoli). Season to taste and let it cook at 🔥 medium with the paella covered (more steam and less oil).

Add the seitan with its juice and the bulgur, let the latter absorb the liquid from the paella and toast a little.

Finally we cover the content of the paella with vegetable broth OR water. Let it cook over medium-low heat without stirring.
