Baked hake on a zucchini bed

Peel the zucchini and cut into thin slices. Arrange the slices occupying all the space of a baking tray, creating the bed on which we will put the hake loins. Salt and pepper to taste (if desired, add a dash of EVOO).

Place the hake loins on top of the zucchini and season with salt and pepper to taste. Add the crushed tomato on top of the loins.

In a bowl mix the finely chopped cilantro with the lemon juice. If you want you can add a little water to reduce the lemon flavor. Sauté the pan with the mixture.

Bake at 200°C for 10 minutes (preheat oven to 200°C). Serve and enjoy.
