Zucchini with bell pepper sauce

Cut the zucchini to taste (I cut them with the peeler to obtain an elongated shape) and add them to the pan over medium heat with a little oregano and garlic (spices to taste).

For the sauce: fry the garlic with half an onion and when ready add the roasted peppers.

When it is mixed, add a spoonful of oregano and pass it all through the blender.

The sauce is for 2 people and if you have leftovers it is perfect for a zucchini lasagna! Add the sauce to the previously made zucchini and enjoy.
