Put the oxtail in an express pot for 30 minutes, then add a carrot in thick julienne strips to accompany or decorate at the end.

In the meantime, prepare the sofrito sauce: in a frying pan, put a tablespoon of olive oil and the garlic cloves. Let them fry for a few minutes until the garlic is golden brown. Add the diced green bell pepper, the diced tomatoes and a glass of red wine. Let everything cook together until the vegetables are soft.

When the oxtail is ready, add it to the sofrito sauce and let it cook together for another 10 minutes.

Serve on a plate, the oxtail in the center and around the potatoes, add the sauce, accompanied by a glass of red wine or a beer or a glass of water and enjoy life is two days. Enjoy!
