Pavlova roll with mascarpone & strawberries🍦🍓

Whip 4 egg whites with a whisk + sweetener (70gr. of erythritol + 1/2 tsp. of sucralose). When whipped add 1 teaspoon of vanilla, 1 teaspoon of apple cider vinegar and 1 tablespoon of cornstarch. Mix gently with a spatula.

Pour the meringue on a baking sheet or parchment paper at 160⁰ for about 25 min (up and down without air). While baking, prepare the filling and set aside cold. Mix with a whisk 225 g Mascarpone with half of the cream + 1 tsp vanilla. Add lemon zest to taste once whipped and mix with a spatula.

Turn the meringue sheet out onto parchment paper and/or a cloth so that it can be rolled up. Spread the Mascarpone filling, add pieces of strawberry or raspberry to taste.

Roll up with the help of the cloth and keep in the refrigerator for half an hour before decorating.

Whip the rest of the cream (about 200g) with 1 teaspoon of vanilla or sweetener to taste if you want to cover the log (I did it to cover the cracks 🙈). Decorate with fork, disposable piping bag with Saint Honoré type nozzle (or whatever you like 😅). Add more strawberries, freeze-dried raspberries or fruit to taste 😋🤤.
