Scrambled eggs with artichokes

Peel the potato and slice it very thinly. Place them on a tray with baking paper, sprinkle them with a pinch of salt and garlic powder and bake at 200º for about 15 minutes.

Meanwhile, prepare a bowl of water and set aside. Remove the leaves from the artichokes until we reach the most tender leaves, cut off the stem and the tip and cut them in half. Pour the pieces immediately into the water so that they do not turn black.

Laminate the garlic and fry it in a frying pan with a dash of EVOO. When it starts to brown, drain the chopped artichokes and add them to the frying pan until they are also golden brown.

Remove the artichokes and set aside. In a frying pan, with a few drops of EVOO, cook the grilled eggs.

Serve the potatoes with the artichokes and eggs and that's it!
